  • 16 - food-contact surfaces; cleaned & sanitized Comments: Cutting board at prep unit with discoloration and grooves.

  • 22 - proper cold holding temperatures Comments: TCS food items held at prep unit observed with internal temperature greater than 41 degrees F. Facility voluntarily discarded all TCS food items.

  • 33 - proper cooling methods used; adequate equipment for temperature control Comments: Prep unit at front area unable to maintain proper cold holding temperature. Facility may not use equipment for holding TCS foods until repaired and given written permission from MCOPH. Send completion work order stating internal temperature to MCOPH.

Facility must submit application and payment OR proof of registration in an approved course with in 30 days.

  • 16 - food-contact surfaces; cleaned & sanitized Comments: Can opener piercing point unclean.

  • 45 - single-use & single-service articles; properly stored & used Comments: Single service containers stored on floor at pizza oven area.

  • 2 - certified food protection manager Comments: 3x r: Facility lacking a Certified Food Sanitation Manager (CFSM) issued by Montgomery County Office of Public Health (MCOPH) or previous certificate has expired. Facility must submit application and payment OR proof of registration in an approved course with in 10 days. EHS left copy of reciprocity application and fee schedule. Failure to comply may lead to legal actions.

  • 19 - proper reheating procedures for hot holding Comments: Food not properly reheated to 165F for hot holding purposes. All foods rapidly reheated to 165° f and placed back into hot holding. Unit turned up.

  • 28 - toxic substances properly identified, stored, & used Comments: Facilty observed with insect pesticide on site in sub basement storage area. Only a licensed pest control operator is permitted to use pesticides in a food establishment in Montgomery County. Item discarded.

  • 38 - insect, rodents & animals not present Comments: Rodent like droppings observed in sub basement storage area. Facility must immediately clean and sanitize area. Facility must be treated by professional pest control service for the above mentioned pest. Report must be provided to MCOPH with in ten business days. Fax or email the service report to the contacts provided by the EHS.

  • 51 - plumbing installed; proper backflow devices Comments: Facility lacking an indirect waste line for a food preparation sink. Facility must install indirect waste lines on middle rinse basin of existing ware wash sink or install a separate one basin sink with an indirect waste line. Facility must comply by 2/19/22. Failure to comply my lead to legal actions.

  • 54 - garbage & refuse properly disposed; facilities maintained Comments: Facilty storing 8 trash/ recycle totes and 2 grease barrels on porous dirt surfaces. Facility must relocate totes and grease barrels to a non porous surface or install a non porous surface in existing area. By 3/21/22. Failure to comply may lead to legal actions.
